Yes, we can extract a lot of information about a body from a simple flyby. Certainly now, since the Lucy spacecraft has been equipped with rather keen instruments. Lucy will do nothing but fly by its asteroidal targets, so it must gather all the data it can in a few brief minutes of close approach.
